Meal Gardener of the Month - October: Lauren!
Here at Meal Garden, we are honoured to have many of Kristine Peacock's (from Meals That Matter) clients join us as they learn how to develop and execute healthier habits. We have been truly inspired by one client in particular, and are now honoured to have her share her story with all of us...
Well hello all, my name is Lauren and I have the honour of being gardener of the month. I am writing to tell you about myself and my experiences with Meal Garden. I am a single mother of a very active almost three year old, and I work full time running the service department of a busy roofing company.
My journey to Meal Garden started years ago with health issues that have had me going to doctors and having test after test. Unfortunately, they were not able to come up with any answers for my constant tummy aches, vomiting, bathroom rush visits and all around issues with food. I finally found culinary nutritionist Kristine Peacock. I started with her power of 30 course that opened my eyes to clean and healthy eating in a way that left me with delicious tasting and time saving recipes. I continued to work with Kristine 1 on 1 to tackle my problems head on. This is when Meal Garden entered my life. Kristine introduced me to the wonders that lay within this remarkable tool, and I will be honest: I have been hooked ever since!
I have become addicted to using Meal Garden for many reasons. I love the amount of recipes that are available and the different skill levels that it offers. I am no 5 star chef, but I do know a little about cooking, and I’m driven by my love of food. Some days I am ready to tackle longer more time consuming recipes, but usually during the week I am a fan of the 30-minute recipes.
My biggest reason for using Meal Garden is how easy it makes my weekly meal planning. It even makes my grocery list as I go. I love that it gives me the options to say that it is from the freezer. I am a big fan of leftovers and keeping them in the freezer again for easy meal options that still provide a healthy and whole foods diet.
If you are looking for an easy go to salad for lunch or dinner I recommend the Lentil & Corn Salad. I modify it by using sesame oil instead of avocado oil to give it an oriental flare.
I plan to continue to use Meal Garden to create a large and diverse cookbook and to plan my weekly meals, its nice to have it set so that I know what’s coming up. I do wish that one day there would be a way to share the meal plans with my meal pals so we can have made and ready meal plans for those weeks that just either get away from you or you just can’t seem to plan.
I encourage everyone to join the Meal Garden community and take advantage of all the site has to offer. There is nothing like having everything you need at your fingertips.
I wish you all happy and healthy planning and eating!
